My Favorite Cut

This is hands down the best example of the Bavette cut I’ve ever tried. There’s a depth of flavor here I’ve never encountered. This cut is associated with a rich “beefy” flavor, but Rocking M’s is something else. It’s deep and earthy without being gamy and there’s a mild sweetness to it in the finish. I’ve never had better. Also, although it’s not ever a fatty cut, there’s a tenderness to it that I normally associate with breeds such as Wagyu. Also, I know the way these cattle were raised, and to receive this gift of nourishment from them and from Rocking M is something I do not take lightly. It’s truly a gift.
